Irish Nachos

Medium to large potatoes, washed – 1 per person

Green chili or black/refried beans, warmed

Cheddar cheese, grated

Green onion, chopped

Boil potatoes in large pot of water with three pinches of salt for approx. 45 minutes. Once you can stick a fork into the potato and remove easily, turn off burner and drain potatoes, letting them cool slightly. Slice into ¼” discs and arrange on large oven-safe serving dish. Layer with chili or beans, cheese, and green onion. Bake for 5-6 minutes at 350 degrees until cheese melts. Serve with olives, tomatoes, jalapenos, sour cream, etc.

 

Meatloaf

1 ½# ground meat (beef or pork)

1/2c breadcrumbs

1/2c V-8 or tomato juice

1/2c milk or grated cheddar cheese

1 pkg dried onion soup mix

1-2 eggs

Combine all ingredients. Place in bread pan. Bake at 350 degrees for 45 minutes. Serve with creamed spinach.

 

Creamed Spinach

1-2 package frozen chopped spinach, cooked and drained well

1/4 to 1/3 c sour cream

Salt & pepper

Nutmeg (optional)

Combine all ingredients and serve with meat loaf.
