“Best Ever” Chocolate Chip Cookies
I found this recipe (in my mother’s handwriting) stuffed into a cook book that lives a dusty and rarely disturbed existence, high up on a shelf in my kitchen. “Best Ever,” these cookies are easy to make and delicious- for breakfast, or anytime!
1 cup butter
1 cup sugar
1 cup brown sugar
Mix together until light & creamy
Add: 2 eggs
½ cup vegetable oil
cornflakes (put 2 ½ cups in a plastic bag and smash ‘em)
2 cups flour
1 cup coconut flour
1 tsp salt
1 tsp baking soda
1 tsp vanilla extract
1 bag chocolate chips
Tablespoon drops onto an ungreased cookie sheet, press with a fork- dip in water to keep it from sticking. Bake at 350 for 12 minutes. Makes 3 dozen cookies.
