Chicken Zoodle Caprese

What to do with all those garden zucchinis? A Caprese (from the Italian Capri) salad is typically prepared with fresh mozzarella, tomatoes, basil leaves and drizzled with olive oil, but this recipe adds chicken and spiralized zucchini for a new twist on an easy, one pan summer dinner.

Ingredients:

1 large zucchini, spiralized

  • 1/2 lb boneless, skinless chicken breast or tenders, cut into 1/2-inch cubes
  • Kosher salt and freshly ground pepper
  • 1/4 tsp. dried oregano
  • 2 tbls. olive oil
  • 3 garlic cloves, minced
  • 3/4 lb. grape tomatoes, halved
  • Pinch crushed red pepper flakes
  • 1 tbsp chopped fresh basil, plus more for garnish
  • 2 oz fresh mozzarella, cubed

Directions:

Spiral the zucchini into “zoodles” using Spiralizer or spiral peeler, set aside. Season the chicken with salt, pepper and oregano.

In a large pan set over medium-high heat, add 1 tbls. oil, chicken, and cook, stirring until browned and cooked through, about 6 minutes. Remove and set aside.

Reduce heat to medium, in same pan, add 1 tbls. oil and garlic, cook 30 seconds. Add the tomatoes, crushed red pepper flakes, season with salt and black pepper. Reduce heat to low. Simmer, covered, until tomatoes soften, 15 minutes.

Increase heat to medium-high, stir in the zucchini and basil, season with salt and pepper, cook 2 minutes. Add the chicken back to the skillet along with the mozzarella. Garnish with chopped basil and serve.
